A piece by Kim Severson for the New York Times appeared yesterday. It is a must read for anyone that dines out. Which is everybody.

I am excited that the challenges of the restaurant workplace are surfacing.

There is a long, difficult road ahead to change our restaurant culture. It will require all of us to address this need—dining public, owners, managers, and the heroes of labor in the kitchen and dining room. I wrote last May “A Suicide Mission” setting out my commitment to reflect upon, understand, and synthesis my life as a cook. And I wrote about my friend Patrick O’Cain’s recent closing of his restaurants, Gan Shan Station. The purpose of my writing is to add an experienced voice to a conversation that will lead to deeper understanding and change.

It is an urgent message. I have again found fire and the passion to do something, to push for change in the culture of cooking as a career. It is the same fire and passion I discovered when I stepped to the stove 48 years ago.
